Thanks for the replies, and forgive me, I'm new to CCTV. I'm a photographer and have done some video editing, so I'm familiar with some of this, but my knowledge in that area I think is getting in the way more than anything.
Cameras are AGI Cameras (CA-TIR8-842 and CA-DIR8-820W). The pictures with people in them are the CA-DIR8-820W, the menu picture is one of the CA-TIR8-842.
Both camera specs:
1/3" CMOS
NTSC: 1296*1041
1000 TV Lines
Cable, I think the model number of what we have is VC-WRG59W1000UL, its the normal 75ohm Siamese Cable RG59+18/2 Power UL Listed CCTV cable.
We have two ends. Ideal RG-59 BNC (59BNCIS) and Greenlee RG-59 (PA9730). Both have the same results.
Cable runs I would say are about 30' on the pictures. The picture of just the cameras menu is about 5'

I just got my hands on an HD 4ch DVR and 1 HD camera I'm testing with. We plugged the CA-DIR8-820W camera into it, and it still looks like crap, so it may be the cameras.
