If you're using it for ip cameras, then the terminations have to match.

Here's a little tutorial on that

If you're using it for analog cameras with baluns, then no there's not really a proper convention for it.

I just stick to the standard pairs so I remember what order things are in.

The pairs are

Pair 1- Blue

Pair 2- orange

Pair 3- green

Pair 4- brown

I always use the blue for video

Thank you for the info and the link. I am wiring a couple of PTZ domes and decide to use cat5. I thought that if there is a convention I had better use it so as not to confuse anybody coming after!
