On Demand Recording At Door

Our home doubles as the office to an apartment complex and we would like to set up a system that balances our privacy along with being able to record interactions that take place at our door. Any recommendations for on demand audio and video recording on demand that can be copied and played easily for law enforcement? I would prefer to keep the amount of hardware to a minimum. Any recommendations?
